Guyanese Cassava Pone
2012-06-30This recipe is a traditional version of cassava pone. Pone is a very heavy, solid, moist cake-like dessert. Since the recipe does not contain any flour this is a great lightly sweet, gluten-free, dessert option.
Ingredients
- 2 medium sweet cassava (yucca)
- 1 small dried coconut
- 2 TBSP butter or coconut cream
- 6 oz brown sugar
- 1 TBSP black pepper
- ½ tsp vanilla extract
- ¼ tsp salt
Method
Step 1
Pre-heat oven to 350°F.
Step 2
Peel, wash, and grate the cassava (yucca) and coconut then mix together.
Step 3
Work in the butter or coconut cream with a fork.
Step 4
Add the other ingredients and enough water to bind stiffly.
Step 5
Put the mixture into a greased pan, where it should be about 1 inch thick.
Step 6
Bake in a moderate oven until crisp and brown on top about 90 minutes.
Step 7
Cut into 1½ to 2 inch squares before serving.
