Niku Jaga (Steamed Meat and Potatoes)

This is a very popular Japanese home – cooked dish that is made slightly different by each family. This recipe is very similar to my Mom’s. – Kana A.

Ingredients

  • 6 oz ground beef (minute steak or stew meat works well), thinly sliced
  • 2-3 medium potatoes (preferably Yukons)
  • 1 medium onion
  • 3 TBSP soy sauce
  • 1 1/2 TBSP brown sugar
  • 1 TBSP sake or sweet sherry
  • 1 TBSP Mirin (or just add another TBSP of sake and a bit more sugar)

Method

Step 1

Peel and cut up the potatoes. Chop up the meat into bite-sized pieces and slice the onion.

Step 2

Add vegetable oil to pan and sauté the meat lightly for 1 minute until the meat starts to brown. Add the sugar, soy-sauce, sake and mirin and stir.

Step 3

Then add the onions and potatoes and cover the pan. Heat over medium-low heat for 20 minutes until the liquid is reduced and the potatoes are tender, and infused with a golden color.
