Sambal

    Sambal is a condiment that has a chili-based sauce.

    Ingredients

    • 12-20 Holland red chilli
    • 4oz Thai Bird’s chilli
    • 2 Tbsp of roasted belachan (Shrimp paste)
    • 1 Tbsp of Sugar
    • Lime juice to taste (preferred Key limes)
    • Salt to taste

    Method

    Step 1

    Using a pestle, pound everything in a mortar (or combine in a food processor until paste-like in texture).

    Step 2

    Save in an air tight jar. You may keep in the refrigerator for up to one month.
