Sambal

Sambal is a condiment that has a chili-based sauce.
Ingredients
- 12-20 Holland red chilli
- 4oz Thai Bird’s chilli
- 2 Tbsp of roasted belachan (Shrimp paste)
- 1 Tbsp of Sugar
- Lime juice to taste (preferred Key limes)
- Salt to taste
Method
Step 1
Using a pestle, pound everything in a mortar (or combine in a food processor until paste-like in texture).
Step 2
Save in an air tight jar. You may keep in the refrigerator for up to one month.
