Kabocha (Cooked Squash)

This is a popular healthy side dish in Japan. This dish goes well with fish.
Ingredients
- Whole squash cut into large chunks (Kabocha preferred, seeded, and skin removed)
- 1/2 tsp fish powder (optional )
- 3 TBSP sugar
- 2 TBSP soy sauce
- 4 tsp mirin
- 2 cups water
Method
Step 1
Boil the squash with water and the fish powder in a medium sized pot for approximately 15 minutes over medium-low heat..
Step 2
Add the sugar, soy sauce, and mirin.
Step 3
When it returns to a boil, put wax-paper on top to trap in the moisture which helps the squash steam. Cook for an additional 10-15 minutes. Squash is done when easily pierced by a knife or toothpick.
