Satsu Mai Mo (Cooked Sweet Potato)

This is a mildly sweet side dish that can also be served as a healthy dessert. It is a common
countryside dish that my grandparents often cooked. – Kana A.

Ingredients

  • 4 medium size sweet potatoes
  • 4 TBSP sesame oil (or vegetable)
  • 6 TBSP brown sugar
  • 4 TBSP soy sauce
  • 2 tsp vinegar
  • Sesame seeds (ground black preferred, but regular okay)

Method

Step 1

Wash sweet potatoes and cut small.

Step 2

With medium size fry-pan, heat the sesame oil and stir-fry the sweet potatoes over low heat for 30 seconds.

Step 3

Add the sugar, soy sauce, and vinegar to the pan and cook over low heat until sweet potatoes are tender, and are lightly caramelized approximately 10-15 minutes, stirring frequently.

Step 4

Put into a bowl and add the sesame.
